Cream Cheese Brownie's


Any box of brownie mix

Make as directed from box.

1 8oz package cream cheese
1/2 C Sugar
1 Egg
cap full of vanilla

Cream together cream cheese, sugar, egg, and vanilla.

In 9x13 baking pan pour half the brownie mix. Then pour all the cream cheese mixture on top of the brownie mix. Drop by large spoonfuls the remaining brownie mix then swirl together with knife. Bake as directed on box you will have to add some time just watch it until knife comes out clean.

Cheddar Biscuits


2 C Bisquick
1/2 C Cold Water
3/4 C Grated Cheese

Mix above ingredients until well blended. Makes approx. 12 dough balls and place on ungreased cooking sheet. Bake at 425º for 8-10 min.

Mix together
1/4 C melted butter
1/4 tsp. Italian seasoning
1/4 tsp. Garlic powder
pinch or two of Parsley flakes

(adjust spices to your liking)

Brush over hot biscuits before removing from cookie sheet.

Beef Enchiladas


1 lb Hamburger
2 Cans Pinto Beans
1 Can Olives
1 Can Green Chiles
1 Large Can Red Enchilada Sauce
Tortillas
Cheese

Brown hamburger meat with your choice of seasonings and optional onions, drain grease then add pinto beans (rinsed and drained), olives (sliced), and the green chiles. Roll mixture in flour tortillas or layer with corn tortillas. Add cheese and sauce in each roll then pour the remaining sauce over the top and sprinkle with cheese. If layering do as follows...corn tortillas, meat mixture, cheese, red sauce and repeat, the top should end with sauce and cheese. Bake at 350º for 30 min or until hot. Enjoy!

Becky's Fruit Trifle



THIS IS SO GOOD!!!
1 Yellow Cake Mix
1 Box (4 3/4 oz) Junket Danish Dessert, Rasberry or Strawberry Flavor
3 1/2 C Water
Cut Up Fruit (Strawberries, Rasberries, Peaches)
1 Small Box Vanilla Pudding
16 oz. Sour Cream

1. Make the yellow cake mix as directed a day in advance so it is a little on the dry side.
2. Make Junket Danish Dessert with 3 1/2 cups of water (Not what it calls for on the box) and let cool for about 30 minutes & then combine with your desired cut up fruit.
3. Make small box of vanilla pudding as directed and combine with sour cream.
4. Layer in pan or bowl repeatedly in this order from bottom to top:
  • Cake (Bottom)
  • Pudding & Sour Cream Mixture
  • Berry Mixture (Top)

Becky's Chicken Enchiladas

2-3 Chicken Breasts
1 Can El Pato Tomato Sauce
Combine in crock pot and cook. Shred and take meat out of the sauce. Place in mixing bowl and add as much as desired of the following. Then Fill torillas and top with cheese. Bake at 350º until cheese melts.
Add:
Sour Cream or Media Crema (comes in a can on the mexican aisle)
Corn
Olives
Kidney Beans
Black Beans

Sauted:

Onions
Garlic
Mushrooms

Barbequed Meatball Recipe


Ingredients:

1 lb. Hamburger or Ground Turkey
1 C. Minced Onion
1 Egg
1/4 C. Milk
1/4 C. Bread Crumbs
1 tsp. Salt
1/4 tsp. Pepper
2 tbsp. Oil
2 (8 oz.) Cans Tomato Sauce
1/2 C. Brown Sugar
2 Tbsp. Vinegar
1 tsp. Seasoned Salt

Directions:

1. Combine the first seven ingredients and shape into 12 meatballs.
2. Brown in oil in skillet & remove excess fat.
3. Combine tomato sauce, brown sugar, vinegar, and seasoned salt. Pour over meatballs.
4. Simmer over low heat 10-15 minutes, turning frequently until meatballs are well glazed. Serve over rice or noodles.

Quick Cinnamon Buns










Cinnamon-Sugar Filling

3/4 cup dark brown sugar packed
1/4 cup granulated sugar
2 teaspoons ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon table salt
1 tablespoon unsalted butter , melted


Biscuit Dough
2 1/2 cups unbleached all-purpose flour, plus additional flour for work surface
2 tablespoons granulated sugar
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon table salt
1 1/4 cups buttermilk
6 tablespoons unsalted butter , melted

Icing
2 tablespoons cream cheese , softened
2 tablespoons buttermilk
1 cup confectioners' sugar

1. Heat oven to 425º. Pour 1 tablespoon melted butter in 9-inch nonstick cake pan; brush to coat pan. Spray wire rack with nonstick cooking spray; set aside.

2. To Make cinnamon-sugar filling: Combine sugars, spices, and salt in small bowl. Add 1 tablespoon melted butter and stir with fork or fingers until mixture resembles wet sand; set filling mixture aside.

3. To make biscuit dough: Whisk flour, sugar, baking powder, baking soda, and salt in large bowl. Whisk buttermilk and 2 tablespoons melted butter in measuring cup or small bowl. Add liquid to dry ingredients and stir with wooden spoon until liquid is absorbed (dough will look very shaggy), about 30 seconds. Transfer dough to lightly floured work surface and knead until just smooth and no longer shaggy.

4. Pat dough with hands into 12 by 9-inch rectangle. Following illustrations below, fill, roll, cut, and arrange buns in buttered cake pan. Brush with 2 tablespoons remaining melted butter. Bake until edges are golden brown, 23 to 25 minutes. Use offset metal spatula to loosen buns from pan; without separating, slide buns out of pan onto greased cooling rack. Cool about 5 minutes before icing. Makes 8 buns.

5. To make icing and finish buns: While buns are cooling, line rimmed baking sheet with parchment paper (for easy cleanup); set rack with buns over baking sheet. Whisk cream cheese and buttermilk in large bowl until thick and smooth (mixture will look like cottage cheese at first). Sift confectioners’ sugar over; whisk until smooth glaze forms, about 30 seconds. Spoon glaze evenly over buns; serve immediately.

Refreshing Summer Punch

2 Litres of Sprite
Water
Lemon Juice
335 ml Frozen Orange Juice
335 ml Frozen Pineapple Juice
1 Pint of Cranberry Juice

In a large punch bowl, add whole cans of FROZEN, not thawed, Orange & Pineapple Juice. Add 3/4 of the Sprite, 3 teaspoons of Lemon Juice, & 1/2 C. Water. Using a hand blender puree the frozen juice together. When smooth add the Cranberry juice, Mix, & Chill.
