Chocolate Trifle Sauce




3/4 C. Whipping Cream
2 T. Butter

2 C. Semisweet Chocolate Chips

1 tsp. Vanilla


Put butter and cream in a saucepan and heat over medium-low heat until cream is hot. Do NOT BOIL. Remove from heat and add chocolate. Let it melt then whisk until smooth and add vanilla. Excellent treat on top of your favorite ice cream!

Parmesan Alfredo Sauce



1/2 C. Butter
1/2 C. Evaporated Milk or Heavy Cream

3/4 C. Parmesan Cheese

1/2 tsp. Salt

Dash of Pepper


Heat butter and evaporated milk on low heat in a sauce pan until butter is melted. Stir in cheese, salt, and pepper. Continue stirring until thickened. Serve over 8 oz fettuccine or other noodles. Sometimes I add shredded chicken to the sauce also.

Olive Garden Alfredo Sauce

1 pint heavy cream
1 stick of butter
2T cream cheese
1 cup Parmesan cheese(I like fresh grated the best)
1 tsp. garlic powder

In a saucepan combine butter, heavy cream and cream cheese. Simmer until all is melted and mixed well. Add Parmesan cheese and garlic powder. Simmer for 15-20 minutes on low. Sometimes I even add a little more parmesan cheese then the recipe calls for.

Homemade Marinara Sauce

Ingredients:
2 T extra-virgin olive oil
2 medium onions, chopped
1 medium carrot, peeled and finely grated
1 tsp salt
1/4 tsp red pepper flakes, or to taste
1 large can (28 ounces) Italian tomatoes, crushed
1 large can (16 ounces) tomato paste
1 tsp sugar (optional)
1 bay leaf (Turkish)
2 T dried whole basil
1 tsp dried whole oregano
Small pinch fennel seeds
1/4 tsp ground allspice
4 cloves garlic, mashed Salt to taste

Instructions:
1. Heat the olive oil in a large pot over medium-high heat. Add the onions and carrot and saute until the onions are translucent.

2. Add the salt and red pepper flakes, then the tomatoes and tomato paste. Mix well, bring just to a boil, lower heat, and continue to cook at a simmer.

3. Add the sugar, herbs, and spices, and simmer uncovered for 30 minutes, stirring occasionally.

4. Add the garlic, and continue to simmer for 30 minutes more or until desired thickness. Add salt to taste. Remove the bay leaf.
